TransglutaminaseMicrobiological transglutaminase is a single polypeptide with a molecular weight of approx. 38 kDa. It is composed of 331 amino acids, with an isoelectric point at pH 8.9.
Yotabio TG is produced through fermentation process(Streptomyces Mobaraensis), then isolated from the culture medium and purified.
TG is an enzyme with the revolutionary ability to improve the physical properties of various protein containing foods.There is no technological function or effect of enzyme in the final product.TG does not affect the taste of food.
