ε-Polylysine (ε-poly-L-lysine), is a small polypeptide of the essential amino
acid L-lysine that is produced by bacterial fermentation; the natural
fermentation is only observed in strains of bacteria in the genus
Streptomyces. it is acknowledged as label-friendly.
ε-Polylysine is commercially used as a food preservative in Japan, the
republic of Korea and in the USA. Food products containing polylysine are
mainly found in Japan. The use of polylysine is common in food applications
like: boiled rice, cooked vegetables, soups, noodles and sliced fish (sushi).
It exhibits good water solubility and heat stability, and does not have an
unpleasant odor. However, impure Polylysine contains more or less chloride
and inorganic contents, increasing the risk of endotoxin and possible
interaction with other ingredients.
It delivers broad antimicrobial effect against moulds, yeasts, Gram-positive
and especially Gram-negative bacteria, with active natural ingredient ε-
Polylysine. It is suitable for versatile applications in food, feed,
cosmeceutical and pharmaceutical industry.
